 Ingredients:

  • 1 cup sugar
  • 2/3 cup corn syrup
  • 1/3 cup butter
  • 1 teaspoon vanilla extract
  • 2-1/2 cups powdered icing sugar
  • 1/3 cup powdered milk
  • 1/4 teaspoon salt
  • Yellow and Red food coloring
  1. Heat sugar, corn syrup and butter in a saucepan and bring to a boil, stirring constantly. Reduce heat low and simmer for 5 minutes, stirring occasionally. Remove from heat and add vanilla.
  2. In a large bowl mix icing sugar, powdered milk, and salt. Then add to the mixture in the saucepan and stir thoroughly. 
  3. When the dough is cool enough to handle separate into 3 equal parts and place each part in a small mixing bowl. Add food coloring to two of the bowls: one is yellow and the other combine yellow and red to make orange.  Leave the third bowl of dough uncoloured or white. Knead the dough in each bowl until smooth and the colors are even.
  4. Roll each batch of dough into a long, thin rope of equal length (about ¼ to ½ inch in diameter). You may need to do this in two batches if you don’t have a long counter or table. You can also cover the working surface with a strip of waxed paper. 
  5. Carefully push the three rolls together with the orange roll in the middle.  Use a rolling pin to slightly flatten the top to create a long, narrow rectangle. Be careful not to flatten the dough too much or they won’t look plump like kernels of corn.
  6. Using a sharp knife cut candy in alternating diagonal lines to form candy corn shapes (triangles). Finish shaping the individual kernels with your fingers until smooth.

Makes 1 3/4 pounds of candy.

You don’t have to limit yourself to making candy corn only for Halloween. You can use your own color combinations for birthdays and special occasions. For example:

Thanksgiving: brown, orange and white
Christmas:  red, green and white
Valentines Day: pink, red and white
Easter: pastel shades of pink, purple and white

This recipe is also great for moulding into imaginative pieces for decorating cakes, cupcakes, special desserts, or eating on their own. You can push them into moulds or free form your creations.
